Description

The installation is designed to be included in the technological scheme for the preparation of yeast autolysates as the main technological element, as well as for the preparation of bentonite suspension during the technological processing of wort and wine materials for the purpose of their clarification and stabilization.

The technological cycle of obtaining yeast autolysate: processing of yeast mass in the installation → aging of the processed yeast mass for 10 days in a tank (to obtain a concentrated yeast autolysate) or adding yeast mass immediately after processing to the wine material in the required amount with aging for 10 days, in this case, a decrease in the mass concentration of protein is ensured in the wine material due to the action of active proteolytic enzymes). As a result, a wine material enriched with yeast autolysis components is obtained.

The main material used in production is stainless steel.

Features of the design: The working body of the installation is a specially designed disintegrator, which during cyclic pumping of the product ensures its processing in the cavitation mode, which allows to guarantee the complete death of yeast cells and induce their autolysis, and also ensures the activation of bentonite and does not require its swelling.

The installation has no foreign or domestic analogues. Allows full autolysis of yeast in an accelerated mode with a guarantee of its quality. The use of yeast autolysates improves the quality of champagne and sparkling wines, brandy spirits, table and fortified wines.
